Vegan Recipe For Çiğ Köfte

Ingredients

  • 2.5 cups of dark bulgur
  • 1.5 cups of hot water
  • 1 tea cup isot chili pepper by Öz Antep
  • 1 tea cup olive oil
  • 3 tbsp sweet paprika powder from Öz Antep
  • 3 tbsp Öz Antep tomato paste
  • 5 tbsp pomegranate syrup from Öz Antep
  • 1 tsp salt
  • 1 onion
  • juice of 1 lemon  

So here's how it works:

  1. Put bulgur in a deep bowl and pour 1.5 cups of hot water over it. Cover the bowl and let it rest for 10 minutes until the bulgur is swollen.
  2. Meanwhile, chop the onion in a kitchen blender and squeeze out excess water with a colander.
  3. Put the isot in a separate bowl, pour hot water over it, and let it soak for 5 minutes.
  4. Add the bulgur, chopped onion, soaked isot (with water), lemon juice, pomegranate syrup, olive oil, salt, tomato paste, and paprika powder to the blender. Mix the ingredients for about 10 minutes, stopping the blender in between and stirring the mixture.
  5. Put the mixture in a bowl and knead with your hands for a few minutes until it is well formed.
  6. Serve the mixture generously with lettuce leaves, tomatoes, and lemons. Enjoy!

INSIDER TIP:

While processing the ingredients in the blender, you should stop the blender from time to time to separate the ingredients from the blades and make sure everything is well mixed. If the mixture is too thick, you can add some olive oil; the sharpness and acidity can be adjusted according to your taste.
